Makes 5 servings (serving a crowd?)
- ¼ cup thinly sliced and quartered red onion
- 2 Tablespoons fresh lime juice
- 5 cups diced watermelon
- ¼ cup chopped fresh mint
- ¼ cup chopped fresh parsley
- ¼ cup sliced pitted Calamata olives (a little over an ounce)
- ¼ cup crumbled feta cheese
Method
- Soak the onion slices in the lime juice while you chop the watermelon and place it in your serving bowl. Top with the herbs, olives, then onion slices and lime juice, lastly the feta. Toss gently and serve.

Suggestions
- We’ll try substituting dill when we serve to a family with a distaste of mint. The salad won’t be the same without a crisp herb, and dill may fit the bill.
