Irish Pea Salad

 

Makes 8 servings (serving a crowd?)

Irish Pea Salad
  • 14oz frozen peas, defrosted, and drained if needed
  • ¼ lb sweet onion, diced medium
  • ½ green pepper, diced medium
  • 2 hard cooked eggs, chopped
  • ¼ lb extra sharp cheese, grated (Dubliner strongly recommended)
  • ½ cup light mayonnaise
  • ½ cup whole milk yoghurt
  • 3 Tablespoons sweet pickle relish
  • 1 teaspoon sugar
  • ¼ teaspoon salt
  • 1 teaspoon Dijon mustard
  • 1 teaspoon sugar
  • 1 ½ Tablespoons chopped fresh basil (see notes)

Method

Mix all the ingredients thoroughly in a 2½ quart or larger serving bowl. Serve it forth.

Notes

It’s crucial that you use fresh basil here for its brightness. One tiny fraction of a leave in a mouthful of peas is so cheering. Yeah, mint may be traditional, but trust us on this.
