- 14oz frozen peas, defrosted, and drained if needed
- ¼ lb sweet onion, diced medium
- ½ green pepper, diced medium
- 2 hard cooked eggs, chopped
- ¼ lb extra sharp cheese, grated (Dubliner strongly recommended)
- ½ cup light mayonnaise
- ½ cup whole milk yoghurt
- 3 Tablespoons sweet pickle relish
- 1 teaspoon sugar
- ¼ teaspoon salt
- 1 teaspoon Dijon mustard
- 1 teaspoon sugar
- 1 ½ Tablespoons chopped fresh basil (see notes)
Method
- Mix all the ingredients thoroughly in a 2½ quart or larger serving bowl. Serve it forth.
Notes
- It’s crucial that you use fresh basil here for its brightness. One tiny fraction of a leave in a mouthful of peas is so cheering. Yeah, mint may be traditional, but trust us on this.↩
