Honey Butter

Makes about 8 cups

2 lb butter (unsalted preferred, but you can get away with salted butter), warmed to room temperature
2 lb honey

Special equipment

Just a wooden spoon and a mixing bowl, but if you want to present a smooth and creamy spread, get out the food processor

It's not written in stone that you must use equal portions honey and butter. This is just a guideline for gauging quantities to purchase. Most cooks vary the proportions by colour, which of course is affected also by the type and quality of your honey.


I've always been tempted to spice Honey Butter with some cinnamon or other sweet spice, but could never gather up the courage to mess with everyone's favourite spread.
