Harissa Yoghurt Sauce


Makes 6 servings

1 cup plain yoghurt
1½ Tablespoons harissa
1½ Tablespoons fresh lemon juice

Mix the ingredients. Spoon onto grilled lamb.


So what’s harissa? Sometimes sold as a powder, more often found as a paste, harissa is Moroccan red pepper condiment. Use your favorite brand or formula. Or use some other red pepper: chipotle flake, aleppo, cayenne, even Louisiana hot sauce. It’s the pairing with the creamy yoghurt and acidic lemon juice that makes the dressing, not the particular hot spice.


Might this work with other grilled dishes like hamburgers or kufta burgers of beef or lamb? Definitely.
