Multiply quantities by 5, so:

15 oz blood sausage (see note)

- Nothing special here, except that, when serving a crowd, we found that patrons consumed the carnivorous version over the vegetarian version only three to two. Experience suggests that that's more a fear of blood sausage than a sudden vegetarian predilection. And if you're making only 3 tarts with black pudding, you'll nead only 9 ounces of blood sausage (a single, tiny black pudding), not 15 ounces.
