Moroccan Turkey Salad for a crowd

 

Making 100 servings

Multiply family serving size quantities by 20, so:

40 lb raw turkey breast
basting seasoning
3½ lb onion, chopped
3½ lb bell pepper, chopped
just under ¾ cup chopped parsley
2½ cups red wine vinegar
2½ cups lemon juice
5 Tablespoons aleppo
just under 2 Tablespoons cayenne
5 Tablespoons cumin
just under 2 Tablespoons salt
just under 2 Tablespoons pepper
10 cups olive oil
60 ounces sliced black olives
100 pitas
