Making 160 servings

Multiply the quantities by 40, so:

80 lbs of chicken cutlets
10 cups of flour
5 lb of butter or margarine
6 lbs of mushrooms
2½ cup of chopped parsley
40 cups of chopped scallions
4 lb of bacon
2½ gallons (40 cups) of cream

Special Instructions

If you can bake the cutlets in steam pans, then all you need to do is remove the pans to your bain-maries. Otherwise, you'll monopolize considerable stovetop space by trying to sauté that so many cutlets at once. But it can be done

Feel free to substiute some condensed and whole milk for the cream.

If you accompany the dish with egg noodles, you'll need 20 lb of dry egg noodles, 1¼ lbs of butter, and about 2 Tablespoons black pepper.
