Making 80 servings

Multiply all quantities by 20, so:

7 lb breadcrumbs
3¾ lb leeks, chopped
5 lb Cheddar, grated
1¼ cups parsley
approx 2 Tablespoons salt
approx 2 Tablespoons pepper
approx 2 Tablespoons mustard
60 eggs
5 cups milk
2½ cups flour
4 cups of oil for frying

This is an ideal make-ahead recipe. Make the sausages a day or two ahead, and fry 'em up for breakfast.
