Chicken Cacciatore for a crowd

 

Making 120 ample or 60 vast servings

Multiply family serving size quantities by 30, so:

3¾ cups olive oil
30 medium fryers of about 3 lb apiece, quartered
15 lbs onions
2½ lb celery, chopped
60 cloves garlic, chopped
15 lb mushrooms, rinsed and roughly chopped
2¼ liters Chianti
10 #10 cans whole tomatoes
¾ cup dried oregano
2 Tablespoons dried thyme
30 bay leaves
10 twigs fresh basil (optional)

Special Instructions for quantity cookery

When you’re cooking this much chicken, it’s much easier to bake it in the oven rather than splatter up your range. In which case you’ll need some roasting pans. About an hour in a preheated 350° is good; maybe an hour and a half if your trays are densely packed.
