Bara Brith for a crowd

Making 36 servings (6 loaves)

Multiply all quantities by 6, so:

6 Tablespoons warm water
2 Tablespoons dried yeast
4 cups of milk
15 cups of unbleached flour
3 cups of wholewheat flour
2 lb butter
1 cup brown sugar
3 cups of currants
3 cups of raisins
½ lb dried apricots, sliced oh-so thin
(very approximately) 1 teaspoon each ground cinnamon, clove, allspice
(very approximately) 2 teaspoons nutmeg

Special Instructions

Personally, I don't ever make more than two loaves at bread at a time. It's easier for me to cycle through batches of one or two loaves than to make a huge single vat of dough and split it up into a multitude of loaves. That way I can be kneading the third batch of one or two loaves while the first batch is baking and the second is rising. Besides, you ever try to knead 15 lbs of dough by hand?
