Armenian Spaghetti for a crowd

 

Making 18 servings

Multiply family serving size quantities by 3, so:

3 large onions
6 Tablespoons butter
3 Tablespoons vegetable oil
3 sticks of cinnamon
4 28oz cans of crushed or diced tomatoes
3 lb no. 8 spaghetti
3 lb American cheese

Special Instructions for quantity cookery

This will fill an 8 quart steam pan very full. One pound of pasta and one pound of cheese per layer, it’s a snap.

Reheats very well. Fritz and Jimmy say, “Reheat? Why? Makes a great breakfast served cold.” Shudder.
