Making 150 servings

Multiply family serving size quantities by 25, so:

10 large cabbages
25 onions
2 lbs bacon, fried and chopped
1½ gallons cider vinegar
salt
pepper
2 bunches of parsley and one red cabbage for garnishing

Here's where it pays to have more than one grater on hand.

Grate the purple cabbage separately and use it to add color to your serving bowls: rings on top of the rest of the slaw, a bright purple border underneath, or even mixed throughout.
